Cauliflower Pizza Crust

I’ve been wanting to make a cauliflower pizza crust for some time and have never gotten around to it.  Part of the problem is that when I think of pizza, I tend to think of the bread / sauce / cheese version that’s typical.

Recently, though, Ediflora hasn’t been home a lot and was forced to eat out quite a bit.  Being in Chicago, there are not a ton of veg-friendly options, but one place we did find and like was True Food Kitchen.  They’re all about serving a diet of anti-inflammatory foods and they also have a lot of vegan options.

One of the things they serve that I can’t get enough of each time I go is their plain pizza just topped with sauce and arugula.  I’ve been completely stuffed and the pizza comes and I think about boxing it up and I just eat it.  The whole damn thing.

Having figured out that there’s a pizza combination that doesn’t involve cheese that I like, I determined that I could do the cauliflower pizza crust with some sauce and then just throw a bunch of arugula on top!  Perfect!  And by the way, who the hell came up with this combination in the first place?

I found a recipe online and then made it up as I went.  Most are a variation on a theme, cauliflower rice, a binder, some seasoning and careful baking.  Easy to do.  Super tasty.  Going to have to try this again sometime.  Unfortunately, I didn’t take a picture of it, but find a recipe and give it a try.  You’ll be glad you did.
