Some people wonder from time to time just what one might eat on any given day. Here’s the way it played out for me today.
Got up later than usual this morning and lifted some weights. By about 10 I sat down and had a bowl of my Crazy Good Granola with some of the macadamia nut milk that I like. After that was done, I proceeded to start chopping some veggies to get ready for lunch. I prepped up some extra, bite-size pieces to add to salads this week. I also halved a spaghetti squash, de-seeded it, and saved the seeds to roast for a snack later. I also made up an Asian-inspired slaw with some red and green cabbage, almond butter, mirin, water, lemon juice and celery salt. That stuff was pretty good if a little rich.
Around 12:30 or so, I made a huge salad, with the chopped veggies and slaw that I’d made, all over a bed of greens with a tofu-based dressing I’d made the week before.
I continued to work through the afternoon on some other things. Late in the afternoon, I saw a recipe for a quinoa, chia bread that was just a few ingredients and looks super easy so I had to try it. That turned out okay. I might try it again. I’m really intrigued with the ways it appears you can use chia and quinoa. Always fun to play.
I’d also been soaking some soybeans, and was going to make milk, but I’ve never loved the soy milk I’ve made, so I decided to try to make it into a cinnamon ice cream. No. Just no. Not loving the texture. At all.
We did some other stuff during the earlier part of the evening. I’m tired, so I’m just having another bowl of my granola with some of the mac milk and a bite or two of this crappy ice cream.
