Because Pumpkin Spice

Continued breaking down apples today.  The first batch went into the dehydrator, because I do love me some dried apples.  I got a thicker cut on them today and I think they’re going to be a little chippier tomorrow.  The last batch were a little too thin.  I also broke down another pumpkin that I cooked sous-vide, with nothing else.  I’m curious what this pumpkin will taste like by itself.  I also made another batch of the Crazy Good No SOS Granola, and added some of the previous pumpkin to the date goo which I thought was a nice touch.  It’s made it sort of a pumpkin spice granola for this time around.  Because, you know, pumpkin spice.

Dinner was leftover lentils that were so meaty tasting I struggled to recall how I’d made them over wheat berries with some of the lemony chickpeas from yesterday on top of a few chunks of a hacked-up and shared acorn squash.  Pea sprouts and arugula/rocket/roquette – spicy lettuce – with some balsamic vinegar made up my greens portion of the my daily dozen.  I think I got most of them in for today.

By the way – if you’re new to this, that last daily dozen link goes out to Dr. Michael Greger at NutritionFacts.org which is a great site for cutting through the haze of everything that you hear and figuring out what the truth really is about nutrition.  He claims not be beholden to anyone, and will revise his own understanding and actions when the science warrants it.  His schtick is that he and his team read all of the published studies on nutrition each year and then sum them up by topic and with a critical eye for things like who’s funding the study and if they are conducting the studies using the gold standard for this type of research.  If you want to know the current word on whether or not the keto diet is good for you, or if there’s anything to eating a Mediterranean diet, Dr. Michael Greger is likely to have a video about it.  We like to have him on in the background while we work out in the mornings.  It’s amazing how little we know about nutrition and it’s fascinating to continue to learn more and more all the time.  Plus, the more you know, the better it can guide your food choices and even meal planning, when you understand how foods work together and to be able to get the maximum benefit from every bite you put in your mouth.
