It’s warmed up a bit here today, but it’s still winter and when it’s cool outside, I love nothing better than a bowl of soup. I came up with this today, I think it sounds good.
- 1 head cauliflower, chopped
- 2 carrots, chopped
- 6 cloves of garlic
- 1 stalk celery, chopped
- 2 zucchini, chopped
- 2 leeks, halved and sliced
- 3/4 cup cashew pieces
- 1 tiny thumb turmeric, quartered
- 2 Bay leaves
- Fresh thyme
- 8 cups vegetable stock
Begin by sauteing your leeks and garlic until you can smell the garlic, about 3 minutes. Add zucchini and saute. Add celery, carrots, turmeric and cashews and saute. Add water and cauliflower. Bring to a boil and allow to simmer for about 30 minutes. Once all of the vegetables are cooked through, turn off the heat. Working in batches, puree the soup in a blender or VitaMix if you have one. Enjoy!
