Have had the fortune to do some traveling recently. Due to having a dog, the incomparable Col. Cuddlesworth III, we drove recently from Chicago to South Florida and Chicago to Connecticut.
The first is a 20 hour drive, the second a more modest 14. Both times, I prepped in advance and we took a huge ration of granola, with some macadamia nut milk to wash it down with, along with the requisite bowl and spoon. I also brought a whole orchard of washed and prepped fruit, as well as chopped up veggies and homemade hummus. It’s totally possible to make it work. We pretty much just stopped at Starbucks’ for bathroom breaks, driver-swaps and caffeine. Nothing else was needed. The only meal we ever did manage to pull off was some vegan Chinese in Atlanta that we sat on some steps outside eating while it rained. Otherwise, it’s pretty sorry pickin’s along America’s highways.
