What I liked most about reading this article this morning was that the guy started out small, with just a truck, and through word of mouth and demand, crowd-funding, and simple desire, grew his business into an actual café and deli with four tables. Four very busy tables.
The more options that are out there for people, the more they’re going to be inclined to take them. I’m sure of it.
Vegan cooking is like when the West was opening up and it’s a whole frontier of possibility, growth, and jockeying for the lead. It’s a an exciting time to cook and it’s an even more exciting time to eat.
