The Granola

Boy do I love eating granola.  Since about the beginning of the year, I’ve been making a batch about once a week and it fits that perfect sweet spot then of being a go-to when I need a bite for breakfast, lunch or an early evening snack before bed.  Here’s what I’m doing.  You can do whatever sounds good to you.  This is what I did today.  Everything but the oats is really optional.

Preheat your oven to 325 F.

Mix the following dry ingredients together in one large bowl. Set aside.

4 cups oats
1/2 cup whole almonds
1/2 cup pepitas
1/2 cup toasted chick peas
1/3 cup sesame seeds
1/3 cup poppy seeds
1/3 cup flax seeds
1/3 cup chia seeds
1/3 cup hemp hearts
1/2 cup flaked coconut
1/2 cup raisins*
1/4 cup gogi berries*
1/4 cup sour cherries*

Whisk together the following wet and dry ingredients together.

1/3 cup agave syrup
1/4 cup fractionated coconut oil (optional)
1 Tbsp maca powder
2 Tsp Ground Cardamom
2 Tsp Ground Ginger
1 Tbsp Ground Cinnamon
1 Tsp Ground Allspice
1 Tsp Ground Nutmeg
1 Tsp Ground Turmeric
A couple of grinds of fresh black pepper

Pour the wet mixture over the dry oats mixture and stir until all of the liquid has been combined.  Pour the mixture onto a parchment lined baking sheet and bake for 20 minutes.  Remove and give the granola a good stir.  Bake for another 20 minutes.  Remove to crisp up.  Store in an airtight container.  Will last for at least a week.

*The dried fruits can be added before or after baking per personal preference.  I like having some each way.  In fact, once I was done with the baking I added additional coconut, raisins and hemp hearts.
