Lentil & Okinawan Sweet Potato Burgers

I’ve got lentils that I want to use, so I get to make some new ones, and some delicious purple sweet potatoes that were cooked a few days ago.  I wonder what they would taste like as a burger?

So I pulled out a sweet potato and peeled off as much of the loose skin as I could.  Then I tossed it in a bowl and mashed it up a bit with a fork.

Next, I added about a cup and a half of leftover, cooked French lentils

and used my hands to mash all that together.  Then I added a cup of oats.

As the lentils were already seasoned, I didn’t add much more to them but a little Spanish paprika, but you can certainly season them to taste.   We’ll see how that goes.

Working on a flax egg to bind it all and then I will make them into patties and bake at 350 for about 30 minutes I imagine.  Those rules seem to generally suffice for most things like this.

EDIT: Yeah, they’re good. Moist, tender, but still holding together. Give them a try!
