Chocolate Chia + Flax Pudding

I’ve been reading recipes for making chia seed puddings and while I could totally see  how it would work, hadn’t actually gone about doing it.  Until now.

That was easy, peasy and probably super nutritious.  I woke up this morning and wasn’t hungry like usual.

Take 1/3 cup chia seeds, I used black, and add

1 cup non-dairy milk, I used almond milk

2 Tbsp cocoa powder

1 tsp vanilla

2 Tbsp D’Vash date nectar – this stuff is seriously amazing

Blend all of that together and let it sit in the refrigerator for about an hour.

Later, I took 3 Tbsp powdered flax seeds and added

1 cup canned coconut milk

Let those two sit together until they thickened up and add that to the previously chilling pudding to thicken it up a bit.

It really worked and I liked the taste.  I ended up eating it with some of my previously-made granola and it made for a nourishing, filling before bed treat.

I’ve doubled down and tried it again this morning.  I used another

1/3 cup chia seeds

1 cup coconut milk

3 TBSP Cocoa – it’s what was left in the canister

3 TBSP date/aquafaba syrup – this shit’s the bomb

1 capful expensive-ass vanilla

Stir that together.  I also added some sunflower seeds to this and baked chick peas I had on hand to bulk it up a little bit and to see what will happen.  It’s already pretty thick.  I’m going to let this chill up for the day and am looking forward to having it this evening.

    This looks nummy. I’m curious to see if I can use D’Vash (maybe sparingly.)
